Ingredients

  • 2 Tbsp. olive oil
  • 2 garlic cloves, minced
  • 1 c. sliced red onion
  • 2 c. broccoli florets
  • 2 small zucchini, sliced
  • 1 c. snow peas stemmed
  • 1 medium tomato, cut in 1/4-inch wedges
  • 1/4 c. Italian salad dressing
  • 3 c. hot cooked pasta
  • Shaved Parmesan cheese

Directions

In skillet with olive oil, cook onion and garlic until onion is translucent. Add remaining vegetables. Stir-fry until crisp tender. Drizzle with dressing. Fold in pasta. Top with cheese. 4 servings
