Vegan Sweet Potato Chili

Ingredients

  • 1 medium red pepper, chopped
  • 1 medium green pepper, chopped
  • 1 small jalapeño pepper, finely diced
  • 1 large zucchini (about 1-1⁄2 cups), chopped
  • 1 large sweet onion, chopped
  • 3 medium carrots, chopped
  • Fresh minced garlic to taste
  • Olive oil
  • 1 tsp. sea salt
  • 1⁄2 tsp. ground white pepper
  • 2 tsp. cumin
  • 1-2 cups water
  • 3-4 lbs. fresh tomatoes, coarsely chopped
  • Juice of small lime
  • 8 medium sweet potatoes (not yams), cubed
  • 4 cups cooked red kidney beans
  • 1-1⁄2 cups cooked black eyed peas
  • 1-1⁄2 cups cooked chick peas
  • 1 cup sweet corn
  • Directions

    Sauté peppers, zucchini, onion, carrot and garlic in olive oil until tender using an 8-qt. stock pot. Stir in seasonings.

    Add tomatoes, lime juice and sweet potatoes and add enough water to cover everything. Simmer 25 minutes or until sweet potatoes are just beginning to become tender. Stir often.

    Add beans, peas and corn. Simmer over low heat for another 20 minutes or until sweet potatoes are tender.
